Afternoon Snack: Refreshing Blueberry-Cucumber Smoothie

I don’t know about you guys, but around the late afternoons, I get really hungry. Lately, I started eating some really unhealthy stuff in the afternoon and need to knock this off ASAP because I am trying to lose weight and not gain more. Lol. So while I was searching for something else completely not related, I found this blueberry-cucumber smoothie recipe. Talk about serendipity. This is the answer. Now all I need is buy one of those magic bullet blenders and I can make this at work! 🙂

Just so you know–this recipe may be in vegetariantimes and may not have a lot of calories, but I can tell you that it will be yummy.

Since this is a recipe for 4 servings, you can halve all the ingredients to make less servings.

Refreshing Blueberry-Cucumber Smoothie

Ingredients:

1) 2 cucumbers (peeled, seeded, and cut into chunks)

2) 1 cup Low-fat Vanilla yogurt

3) 1 cup frozen or fresh blueberries

4) 1–2 Tbs. honey or agave nectar

5) 1 Tbs. lemon juice

Direction: Blend and enjoy~

    • Yes, it is different isn’t it. Do let me know how you like it. I have just purchase the little personalized blender and now waiting for it to get here so I can enjoy this when working. Little simple pleasures like that gets me totally excited and happy. 🙂
